
After 20 years running restaurants across Asia, the Middle East, and the U.S., Kanickaraj brought Westbrook its first authentic Indian restaurant — backed by a head chef from Moti Mahal in Delhi, the kitchen that invented butter chicken.
Antonio Kanickaraj founded Bombay Bistro in Westbrook, Maine in January 2026, bringing more than 20 years of restaurant leadership across Asia, the Middle East, and the United States to a community that had no truly authentic Indian restaurant.
A classically trained chef specializing in Mughlai, South Indian, North Indian, and Thai cuisines, Kanickaraj divides his time between Maine and Los Angeles, where he also owns three restaurants. His head chef brings more than a decade of experience from Moti Mahal in Delhi — the legendary kitchen credited with inventing butter chicken.
